Vegetarian Paella

Ingredients:

1/2 pint of water

1/4 teaspoon saffron

2 tablespoons olive oil

1 red pepper, chopped

2 carrots

1 medium white onion, chopped

150g artichoke hearts

2 garlic cloves, chopped very small

350g Paella rice, Arborio or Bomba

1 pint of vegetable stock

250g chopped tomatoes

3/4 teaspoon paprika

1/2 teaspoon salt

350g butter beans

125g frozen peas

What to do:

Heat olive oil in heavy large saucepan over medium heat. Chop the pepper and carrot small. Add it to the pan with the onion. Fry until the onion is golden and the carrot is soft. Add the artichoke hearts and the garlic and fry on a medium heat for about 5 minutes.

Reduce the heat to low. Add rice and stir it in the oil with the pepper, carrots and artichoke hearts until the rice is mixed well with everything in the pan. Add chicken stock, saffron and tomatoes and turn up the heat. Cover the pan and allow the rice to cook slowly in the stock and juices. Stir frequently. Do not be afraid if it catches a little on the base. This burnt bit will break up when you stir the pan and it gives a lovely caramelly additional flavour to the dish. Add the paprika and salt. Reduce the heat to low. Cook for 15 minutes.

Put the beans and peas on the top of the rice mixture in the pan. Cook until all the liquid is absorbed and the rice is tender (if all the liquid has gone and the rice is not tender add a little more liquid and continue cooking), about 5 minutes. Remove from the heat. let it stand to rest for 5 minutes and then serve.
